Offer a Versatile Wine Selection with Butter Boards
Ok, maybe this isn’t quite a “recipe,” but it’s certainly a party-pleaser. The butter board is precisely what it sounds like—a board covered with various kinds of butter, fresh fruits, drizzles, herbs, and whatever else your heart desires.
This combination of the trendy charcuterie board and bread & butter plate has really been around for as long as people have been eating butter. More recently, it was mentioned in 2017 in Joshua McFadden’s cookbook “Six Seasons: A New Way With Vegetables.” However, it wasn’t until TikToker and chef Justine Doiron posted about it in September of this year that the butter board rose to fame.
Her version involves spreading softened butter onto a wooden board. Then she sprinkles flaky sea salt, herbs, lemon zest, honey, red onion, and even a few edible flowers on top. She dips bread into her magical creation, eats, and voila.
The great part about this concept is that it’s entirely customizable. We’ve seen versions with thinly sliced pears, garlic, chili oil, you name it! There have even been alternative versions that swap butter for things like goat cheese or ricotta. Plus, just swap the bread for low-carb crackers or homemade versions and you’re keto goals are STILL intact.
Since these boards can be catered to specific tastes, it’s a good idea to offer versatile wines with a decent amount of acidity. The latter is important to cleanse the palate after the high-fat content of the butter. That’s why we recommend a medium-bodied Pinot Noir with plenty of fruity aromas. Conversely, you could lean into those rich, fatty textures by providing a buttery Chardonnay. Honestly, if you’re bringing a butter board to a holiday party, you should really just bring BOTH options!
Rosé and a Breakfast Charcuterie Board Just Make Sense!
We swear we’ll get to some actual cooking, but trust us when we tell you that you’re going to WANT a few crowd-pleasing options that are easy to throw together in a pinch. Plus, when everyone wakes up after a holiday party and needs a life-saving meal, the Breakfast Charcuterie board is just the thing.
Again, this option is exactly what it sounds like—a charcuterie-style combination of all your favorite breakfast foods. What could be better?! We’re not quite sure precisely who originated the trend, but all you have to do is type in “Breakfast Charcuterie,” and you’ll be flooded with hundreds of unique and creative versions.
Here are just a few items you might want to include on your board:
- Hard/soft-boiled eggs
- Berries
- Mini-pancakes (there are TONS of low-carb recipes for this!)
- Sausage links/sausage patties
- Bacon
- Avocados
- Small toast points
- Mini-muffins (or low-carb equivalent)
Just select your favorite things, arrange them artfully, and you’re done! As far as wine goes, there’s no question. A floral, medium-bodied Rosé is an absolute must. This particular bottle has delicate notes of raspberry and rose that will pair beautifully with all your breakfast favorites.
Pair This Green Goddess Salad with a Crisp and Refreshing Wine
While it might not scream holidays, you’ll be glad for something crisp and refreshing after eating all of the rich foods associated with this time of year. It was originally posted by @bakedbymelissa in late 2021, but its popularity has kept the trend going well into 2022.
You’re more than welcome to check out her original TikTok (give her a follow while you’re at it!), but here’s a simplified version…
- Thinly chop cabbage, cucumber, chives, and green onion.
- Mix together in a large bowl.
- In a blender, add garlic cloves, shallots, lemon juice, olive oil, cashews, basil, spinach, and nutritional yeast. Blend until smooth.
- Pour the mixture over chopped veggies and mix together until everything is coated.
She provides specific measurements for each ingredient, so DEFINITELY go give her a look. This can be eaten by itself or even as a dip with crackers (just make sure you chop the vegetables small enough so it’s easy to scoop onto a cracker).
Since there’s a good amount of acidity in the dressing, we recommend pairing it with a wine that’s equally crisp and refreshing. Our Vermentino has beautiful notes of peaches, flowers, sage, and rosemary which create a delicate flavor profile when paired with this zesty salad.
TikTok Brie and Blueberry Skillet
It’s the holidays, so that means it’s time to indulge! And this recipe is definitely an indulgence. It’s crunchy and creamy, tart and savory, and you’ll definitely find yourself going back for it again and again—it’s the Brie and Blueberry Skillet.
We found the version created by @justinmschuble and knew it would be perfect for holiday gatherings. He starts by scoring a round of brie cheese with a knife, and then he adds blueberries and pecans to a separate bowl and mixes them together with sugar (feel free to swap this with a low-carb sweetener). This is where everything starts coming together.
He adds avocado oil to a skillet (we’re guessing over medium heat), places the brie in the center, and then pours the blueberry/pecan mixture around the sides of the brie. He lets the sugar dissolve a bit before placing a lid on the entire thing. Once the mixture is bubbling and the cheese has started to melt, he removes the lid, turns off the heat, and that’s it!
We imagine he lets the skillet cool down a bit before letting people dip their bread/cracker of choice in, but it must be a struggle because it looks SO GOOD. Since this recipe has a combination of rich fat, tart berries, and sweetness, finding the perfect wine pairing is tricky…but not impossible.
We’d recommend either a Cabernet or a Merlot for this recipe. The former has a bouquet of violet and black cherries that will create a beautiful depth of flavor when paired with the creamy brie and tart blueberries. The Merlot, however, has hints of currant, black pepper, and spice that will create something really complex and savory when paired with this dish. But when in doubt, go for both!
